For culinary enthusiasts, especially those who love grilling dishes like Japanese BBQ (Yakiniku) or satay, the type of charcoal used determines the final taste of the dish. In the culinary world, two types of charcoal are popular but possess vastly different characteristics: Binchotan Charcoal (traditional Japanese white charcoal) and Regular Wood Charcoal (black charcoal).

  • Binchotan Charcoal: Crafted primarily from a specific type of hard oak called the Ubamegami oak. The carbonization process is extreme; wood is baked in a sealed kiln at low temperatures, which is then rapidly raised to over 1,000 degrees Celsius. Once fully carbonized, the charcoal is pulled out and instantly smothered with a mixture of ash, sand, and soil to cool it down quickly. This process causes a chemical reaction that leaves a whitish residue on the surface (hence the name white charcoal).

  • Binchotan Charcoal: Boasts an incredibly long burn time, usually lasting between 3 to 5 hours. It burns at an exceptionally high, steady temperature and emits far-infrared rays. This radiant heat cooks meat from the inside out very quickly, sealing in the natural juices (juicy) without scorching the exterior.
